Carrot And Coconut Cookies
INGREDIENTS
- 130g butter softened
- ⅔ cup brown sugar
- ½ cup Comvita Manuka honey
- 1 egg
- 1 tsp vanilla extract
- 1 cup wholemeal flour
- ½ cup white flour
- ¼ tsp salt
- 1 tsp cinnamon
- 1 tsp baking soda
- 1½ cups rolled oats
- 1 cup shredded coconut
- ½ cup raisins
- ½ cup white chocolate chips
- 1½ cups grated carrot.
DIRECTIONS
Preheat oven to 170°C.
Using a mixer with a paddle attachement, cream butter and sugar until pale and creamy. Add honey and beat a little longer. Add egg and vanilla and beat another 20 seconds or so. Add remaining ingredients and mix until just combined.
Roll into 20 balls and flatten with a fork.
Bake 20 minutes or until golden. They’ll last in a tin for up to a week.
A perfect lunchbox addition or after school treat, these biscuits are made with wholesome ingredients like wholemeal flour, carrot and Manuka honey.
