Cauliflower Chocolate Muffins
INGREDIENTS
- 1 cup white flour
- ½ tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- ⅓ cup cocoa powder
- 1 cup chocolate chips
- 2 cups raw cauliflower, fresh or thawed if frozen
- ⅓ cup Comvita Manuka honey
- 1 tbsp vanilla extract
- ¼ cup milk of your choice (we like unsweetened almond milk)
- 2 eggs
- ½ cup neutral oil (we used rice bran oil)
DIRECTIONS
Preheat oven to 175°C and line a 12 hole muffin tin with paper muffin cups.
Sift dry ingredients together into a large bowl. Add chocolate chips.
Combine wet ingredients in a food processor or blender and blend until they form a liquid consistency. There will be a slightly grainy texture to the liquid, soft grains about the size of grains of salt, but the mixture should be completely smooth and uniform.
Pour wet ingredients into dry ingredients and mix until combined.
Dollop batter into prepared muffin tins and bake for 20 minutes. The centres will be just cooked. Cook for 5 minutes longer for firmer centres, or 5 minutes less for extra-gooey centres.
Makes 12 Regular Muffins
