Ingredients:
- 1 cup of uncooked quinoa
- 1 tablespoon of cinnamon
- 1 cup of chopped walnuts, almonds, and/or pistachios
- 2 cups of frozen blueberries or raspberries (or both!)
- 2 eggs
- 2 cups of almond milk
- 1/2 cup Comvita UMF 5+ Manuka honey.
Directions:
- Preheat oven to 180°C
- Lightly coat an 8 x 8-inch baking dish with a light vegetable oil spray
- Toss uncooked quinoa with cinnamon
- Pour the cinnamon-coated quinoa over bottom of prepared dish
- Evenly spread nuts and berries over the top of the quinoa
- Whisk eggs in a small bowl, adding the milk and Manuka
- Pour the mixture into the baking dish
- Bake for 1 hour, or until the Breakfast Bake is almost completely dry
