Cauliflower Chocolate Muffins

INGREDIENTS
- 1 cup white flour
- ½ tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- ⅓ cup cocoa powder
- 1 cup chocolate chips
- 2 cups raw cauliflower, fresh or thawed if frozen
- ⅓ cup Comvita Mānuka honey
- 1 tbsp vanilla extract
- ¼ cup milk of your choice (we like unsweetened almond milk)
- 2 eggs
- ½ cup neutral oil (we used rice bran oil)
DIRECTIONS
- Preheat oven to 175°C and line a 12 hole muffin tin with paper muffin cups.
- Sift dry ingredients together into a large bowl. Add chocolate chips.
- Combine wet ingredients in a food processor or blender and blend until they form a liquid consistency. There will be a slightly grainy texture to the liquid, soft grains about the size of grains of salt, but the mixture should be completely smooth and uniform.
- Pour wet ingredients into dry ingredients and mix until combined.
- Dollop batter into prepared muffin tins and bake for 20 minutes. The centres will be just cooked. Cook for 5 minutes longer for firmer centres, or 5 minutes less for extra-gooey centres.
